In case you're wondering, it's not a typo up there for you see the definition of goodly is:

used as an adjective to describe something
1. of ample or good size, ex: a goodly amount.
2. of a fine appearance, ex: a goodly young man.
3. Archaic. of good quality, ex: a goodly gift.

I am a mother who home educates her children; I would be pleased if you'd look around. You never know if I might have something to your liking. I've blogged about different topics. Quick Food for a Vacation

Here we are on a mini-vacation.  Didn't know if we'd make it, but we are at the beach.  We have a double challenge with our food.  We are still participating in the No Takeout Challenge.  Now, we have to keep it going while on vacation!!!

Anyone who has gone on vacation knows what it's like to figure out what to eat and/or prepare in the way of meals.  It's a struggle to come up with quick snacks and meals.  It's a struggle to come up with something that everyone will enjoy.

The easiest thing to make is a sandwich.  Each family member can customize their own sandwich.  I brought sliced turkey breast, bologna, cheese slices, mayonnaise, and mustard.

Then, there are pre-packaged items.  Uncle Ben's Ready Rice, Wolf Brand Chili, and Ranch Style Beans are among the items we brought with us.  My hope is that we can buy some meat at the local grocery at the beach.  We made sure to rent a room with a kitchenette so we can cook some of our own meals.

For something a little more quick, we brought macaroni and cheese and soups in cups.  The room, fortunately, has a microwave.


Healthier meal alternatives

Baby carrots, cherry tomatoes, and spinach can be dipped in the ranch dressing I brought with us.  Mott's Healthy Harvest apple sauce comes in handy, too.  All we need to do is make sure to provide some plastic spoons.   Strawberries, green grapes, and red grapes are perfect fruits to go.  All we did was to containerize the fruits and veggies with either baggies or plastic reusable Rubbermaid containers.

Finally, we had portioned out a few snacks.  Among the choices were cereal, chocolate animal crackers, and raw almonds and walnuts.  I love Cheerios and so do the kids.  I eat the walnuts because they are filling and good for you.

Many a Monday Quick Meal--Spaghetti

This is my simple spaghetti.

There have been many Mondays when I wonder what I should make for dinner.  I've needed something quick and easy.  That's why I've made this particular meal of simple spaghetti quite a few times.  I've modified it to fit the needs and wants of my family.


This is ground down beef.

First up is to brown ground meat.  All you need is a pound.  I use a bean smasher to break up the bigger pieces.  I've never made meatballs; someday, I'll make them.  I've made hamburger patties, and I don't like to get my hands dirty.



For a long time, I used only these spices for most of my meals.


Next, I add these spices.  Minced onion, ground black pepper and salt are my easy choices.  I do this in case I have leftover meat to use in another meal.


Hubby bought me this thin spaghetti.

Admittedly, you can use any sort of pasta for this meal.  There have been times I've used penne or rigatoni for my simple pasta meals. 


I made the whole bag of spaghetti.

I break up my pasta so that it is easier to slurp it into my mouth.  Sometimes, I cook half the bag of spaghetti.  Other times, I make the whole bag and save the leftovers for hubby's lunch for the following day.  


This spaghetti sauce is delicious.

I warm up the spaghetti sauce in another pot.  I don't mix it with the ground meat because not all of my family members like spaghetti sauce in their pasta.   


Here is a stack of toast that was for our meal.

My son made the toast.

I toast a few slices of bread.  I dab some butter, like Fleischmann's.  Sometimes, I sprinkle some garlic powder on my own slices.


These are some extras for our meal.

Lastly, I like to encourage my kids to eat vegetables.  Some of them will eat spinach.  My youngest likes the tomatoes.  I bring out these extras for the meal.  These are optional, like mozzarella cheese, croutons, and salad dressing.
